Do you have plans for Memorial Day weekend? For my family, it marks the opening day of pool season! So, we are working hard to get everything ready to enjoy the pool for the summer. I always like to order fluffy pool towels and I ordered new floating noodles for the neighbor kids. I also want to have a couple of new serving platters for snacks and salads and non-breakable glasses for around the pool. One recipe I always make for the weekend is green bean and feta cheese salad. If you want to give it a try, I’ve included the recipe at the end of this post.

To create great summer outfits you always need a few good basics on hand. So, I suggest you always have a fresh white T-shirt (or this one or this one )and neutral color tank tops on hand in your closet. Sporty Outfits – Tennis and Pickleball
Do you play tennis, or have you ever tried playing pickleball? Here’s a fun fact: did you know pickleball was invented on Bainbridge Island, just outside Seattle? Tennis and pickleball outfits are one of the hottest trends on and off the courts. So whether you’re into these sports or not, you can still wear the look! Here are a few sporty looks I found. Plus, you might need to get paddles. I ordered pickleball paddles and a new skirt (try this one if you like a longer skirt), tank and this top too. I’m just starting to play pickleball and will update you on my progress later this summer. 🙂

Here’s a delicious green bean & feta salad recipe I make every Memorial Day and throughout the summer. It’s an older recipe but a crowd pleaser! Credit goes to the Simply Classic cookbook, Junior League of Seattle.
Green Bean & Feta Salad- From Simply Classic Cookbook
Salad
1 1/2 pounds fresh green beans
1/2 cup red onion, finely chopped
1/2 cup feta cheese
1/2 cup walnuts, toasted and chopped
Dressing
1 tablespoon lemon juice, freshly squeezed
1 tablespoon white wine vinegar
1 teaspoon Dijon mustard
1/4 teaspoon dried basil, crumpled ( I chop some fresh basil for garnish)
1/4 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup olive oil
Plunge beans into a large pot of rapidly boiling water. Cook for five minutes, or until just tender-crisp. Meanwhile, prepare a large bowl of ice water. Drain beans and plunge into ice water until cool. Drain and pat dry.
For vinaigrette: combine lemon juice, vinegar, mustard, basil, sugar, salt and pepper in a small bowl. Slowly whisk in olive oil. Wisk until thickened and thoroughly blended.
Toss beans and vinaigrette. Place on beans on a serving platter, tops with red onions, feta and toasted walnuts. Serve immediately or chill for several hours. Garnish with fresh basil.
